8 Main Meals in 1 Tray


I had fun making the 8 Desserts in 1 Tray so I thought I would challenge myself to see if it was possible to make 8 Main Meals in 1 Tray.
Can I really make 8 main course dishes and put them all together in 1 Tray? What main dish would you want to be included in this recipe?

How to make 8 Main  Meals in 1 Tray
Prep Time: 30-60 minutes
Bake Time: 1 Hour
Oven Temperature; 150C / 300F

Ingredients

Shepherds Pie

  • 50g Fresh Minced Lamb
  • 1/4 of an Onion, finely diced
  • Herbs
  • 1/4 cup of Stock
  • Salt and Pepper
  • 2 medium Potatoes
  • Splash milk
  • 1 tablespoon Butter
  1. Peel and cut up the potatoes, place into a pot with water and a little salt and cook until soft. Remove from the heat, drain the water, add the milk and butter, then mash until soft and creamy. Place into a piping bag ready to use.
  2. Fry the onion and mince together until brown. Add the stock and seasonings and set to one side.

Fresh Lasagna

  • Fresh Pasta made with 200g of Flour & 2 eggs
  • 30g Butter
  • 30g Flour
  • 250ml of Milk
    This was enough Bechamel Sauce for all the dishes
  • Handful grated Cheese
  • 1/4 of an Onion, finely diced
  • 50g Fresh Minced Beef
  • 1/4 of a can of Diced Tomatoes
  • Herbs
  • 1/4 cup of Beef Stock
  • Salt and Pepper
  • Parmesan Cheese to sprinkle over the top
  1. Make the fresh pasta and then roll out until thin, cut into two oblongs big enough for 1/8 of the tray. Next you will need 2 side ‘walls’ of pasta. Then place all the prepared pasta onto a flat tray and place in the fridge to chill.
  2. In a small pan add the butter and flour and cook together until it looks a little ‘sandy’, gradually add the milk until you have a smooth bechamel sauce. Season and divide into three bowls. Add grated cheese to one bowl, fresh herbs to another and leave the 3rd bowl as it is and set to one side.
  3. Fry the onion and beef together until brown, add the stock and tomatoes and seasoning, cook for a couple of minutes and then set to one side.

Pizza

  • 250g of Strong Flour
  • 1/4 teaspoon of Instant Yeast
  • A splash of Oil
  • Enough Water  to form a Nice Dough
  • Tomato Sauce
  • Olive Oil
  • Mozzarella Cheese, Sliced
  • Fresh Basil
  • Salt and Pepper
  1. Make the pizza dough by placing the flour in a bowl, add the yeast and then the oil and water, Mix together to form and dough and knead for about 5 minutes. Place back in the bowl, cover with plastic wrap and leave somewhere warm to prove. Once it has risen, remove from the bowl and make into an flat oblong 1/8th of the tray and place in the freezer to slow the proving. This is placed in the tray first so it is given a chance to come back up to room temperature.

Mac ‘n’ Cheese

  • 1/4 of a packet of Mac ‘n’ Cheese
  • Parmesan Cheese
  1. Make up the Mac n Cheese as directed on the packet but do not do this until you are ready to pop it into the tray as it dries out too much.

Nachos

  • Tortilla Chips
  • Refried Beans
  • Grated Mozzarella
  1. This just needs everything to be ready to place into the tray, so nice and easy.

Short Crust Pastry

  • 250g / 9oz of All Purpose Flour
  • 125g / 4.5oz of Butter
  • 2-4 tablespoons of Cold Water
  1. Rub the butter into the flour in a bowl until you have a breadcrumb like consistency. Gradually add the cold water until a pastry dough is formed.
  2. Wrap in plastic wrap to chill for 30 minutes then roll out a piece of pastry  to fit one quarter of the tray forming a base pie crust. Return to the fridge on a flat tray. Make the side wall of the pie crust and the middle divider piece of the pie and place in the fridge to chill.
  3. Now make another base just for 1/8 of the tray and a pie top for the Chicken Pie. You will also need one more wall for the quiche that is big enough to fit 2 sides. Place the pieces onto a flat try and chill.

Quiche

  • 1 Rasher of Bacon, fried till crispy and diced
  • 1 Egg
  • A Splash of Milk
  • Salt and Pepper
  • Grated Cheese
  1. In a small bowl mix the egg, milk, cheese and seasoning together and set to one side.

Chicken & Mushroom Pie

  • 1/2 a Chicken Breast, Diced
  • 3 Mushrooms, Diced
  • Bechamel Sauce
  1. This just needs everything to be ready to place into the tray.

Fish Pie

  • 2 small fish Fillets, skinned and diced
  • Bechamel Sauce with fresh Herbs added
  • 2 Medium Potatoes
  • A splash of Milk
  • 1 tablespoon of Butter
  1. Peel and cut up the potatoes, place into a pot with water and a little salt and cook until soft. Remove from the heat, drain the water, add the milk and butter, then mash until soft and creamy. Place into a piping bag ready to use.
  2. Have the fish and becahamel sauce ready to use.

Instructions

  1. Once you have all your dishes prepared and ready to go it is time to construct your masterpiece.
    Spray a 11 x 16 inch tray with cooking oil and line with baking paper.
    Visually divide your tray into 8 equal portions.
  2. In the top second left hand portion, place the pizza dough and shape into a smooth oblong.
    Next place the meat for shepherds pie in the top left hand corner, next to the other dough and then below that start to construct your lasagne. Place a layer of meat top with a pasta sheet layer on some cheesy bechamel sauce and the repeat. Finally sprinkle on some parmesan cheese.
    Next pipe the mashed potato on top of the meat for the shepherds pie. Then use a fork to make pin pricks over the pizza dough drizzle with olive oil and spread a layer of tomato sauce. Add the mozzarella cheese slices and basil leaves and season with salt and pepper.
    In the right hand side of the tray lay the pie crust. Trim off the excess along the outer edges. Place the dividing piece of pastry in the centre of the pastry to create two seperate pies. Press along the base to get a good seal. Next place the edge piece of the pie crust in place and seal any edges with a little egg white. You should now have two seperate pie cases.
    Fill the top right pie crust with the chicken and mushrooms and then layer in some bechamel sauce, top with the Pie crust and crimp around the edges to seal.
    In the lower right pie crust place the fish and pour over the herby bechamel sauce. Top with wavy lines of Mash Potato.
    Next to the fish pie lay the last piece of pastry base and edge with the remaining strips of pastry. Add the crispy bacon.
    Next to the Quiche base and Lasagne place your prepared Mac N Cheese and sprinkle with a little extra cheese.
    Next to the pizza and above the quiche fill the space with plenty of Tortilla Chips, spoon on some refried beans and top with cheese.
    The last remaining piece to do is to pour in the quiche mixture and then using a pastry brush just brush over the top of the chicken pie with a little of the egg mixture to create a lovely brown crust when cooked
  3. Now it is time to get the tray into a pre heated oven and bake for 1 hour.
    Once it has cooked remove from the oven and allow to cool completely before lifting it out of the tray onto a cutting board.
  4. Cut the 8 mains into even bite size morsels and Have fun and Enjoy!!!!
