How to make Blueberry Pancakes

I decided that Blueberry Pancakes were the order of the day for Breakfast.

During my recent stay in Palm Springs I was lucky enough to buy 2lb /1kg of Fresh Blueberries and they were so cheap too.

This is a simple recipe and a great way to start the morning so if you decide to make this dish why not share some photos across to me on any social media as I always love to see what you have been up too.

  1. In a large bowl add the flour, sugar, baking powder, baking soda and salt. Add the egg, buttermilk and melted butter and whisk together to get a lovely smooth batter. Add the blueberries and gently stir into the batter.
Allow the batter to sit for a while to let the flour absorb all the liquids.
  2. Place a frypan onto the stove and allow to get hot. Spoon a cupful of the batter into the centre of the pan and evenly distribute the blueberries. Allow to cook on one side until you can see no more liquid then turn the pancake over. Cook for about 30 seconds on the second side then remove and place onto a serving plate.
  3. Continue to cook the pancakes and stack on the plate . Serve with Maple syrup, butter and extra blueberries and enjoy.
