DEVON CLOTTED CREAM FUDGE RECIPE – or Cornwall of course 2


I love Fudge and I made some delicious Clotted cream the other day on my Channel and what better way to use that wonderful cream than to make some homemade Clotted Cream Fudge, it’s just to die for. I absolutely love it 💕

How to make Devon Clotted Cream Fudge
Prep Time: 30 minutes
Cook Time: 5-10 minutes

Ingredients

  • 275g / 10 oz Castor or Superfine Sugar
  • 225g 8 oz of Clotted cream
  • 100g / 4oz of Golden Syrup
  • 1/2 a teaspoon of Vanilla Extract

Instructions

  1. Line an 8 inch baking tray with baking paper and set to one side.
  2. In a large saucepan place the Sugar, Syrup, Cream and Vanilla and heat them gently on the stove until the sugar has dissolved, stirring constantly so that the sugar doesn’t burn. Continue to heat until the sugars start to boil and continue to gently boil the liquid for 5-10 minutes until the sugars reach a temperature of 116C / 240F ( soft Boil for sugars). Once you have reached the correct temperature remove from the heat and place onto a cool surface to allow the temperature to reduce a little.
  3. Once the liquids have stopped bubbling it’s time to start stirring to make the fudge. You will need to stir for about 5 to 10 minutes to allow the fudge to cool and thicken. The glossy shine will start to disappear and it will have more of a matt finish. Once your fudge resembles a light peanut utter consistency you are virtually there.
  4. Pour the lovely thick fudge into your prepared baking tray , level it all out and place into the fridge to set. Once the fudge has set you can remove it from the tray and cut it into pieces ready to enjoy. A nice way to serve these is to drizzle a little chocolate over the top. Yum Yum!!!!

    Hi Steve,
    Just wanted to thank you for the great video on making clotted cream. I made it for my Tea over the weekend, and had rave reviews! I had no idea it was so easy to make and tasted so great! I have some leftover and will be making your Devon clotted cream fudge later today.
    Now my tea has both homemade clotted cream AND lemon curd.
