How to Make Gnocchi – With and Without Egg


Which is best? Gnocchi made with or without eggs. In this video Steve makes both. Which one does he prefer?

How to make Gnocchi
Prep Time: 10 minutes
Cook Time: 1-3 minutes

Ingredients 

With Egg

  • 1lb /500g of Cooked Potato
  • 5oz / 150g of All purpose Flour
  • 1 Egg Yolk
  • Salt and Pepper

Without Egg

  • 1lb / 500g of Cooked Potato
  • 2oz / 50g of All Purpose Flour
  • Salt and Pepper

For the Sauce

  • 1 tablespoon of Olive Oil
  • A tablespoon of Butter
  • 1 Clove of Garlic
  • A Tomato, Diced
  • Salt and Pepper
  • A little chopped Parsley
  • Some Parmesan Cheese
  • 2 tablespoons of Thick Cream

Instructions

  1. Bake or cook your potatoes whole and once they are nice and soft remove them, allow them to cool slightly before cutting them in half and scooping out the fluffy centres. Mash or rice your potato till its nice and smooth and place onto the work counter.
  2. If you are using eggs you need to add the flour onto the potato, make a little well in the centre, sprinkle in some salt and pepper and then pop in the egg yolk. Use a fork to start to mix this all together and then use your hands to work this into a smooth gnocchi dough. Try not to over work the dough as it will make for tough Gnocchi.
  3. To make the gnocchi without eggs again place your mashed potato onto the work counter, add the salt and pepper and then pour on the flour. Again use your hands to mix everything together and form a smooth gnocchi dough.
  4. Once you have the gnocchi dough either with or without eggs the next steps are the same. Break off a piece of the dough and using a little bit of cornflour on the board roll the dough out into long snakes. Next cut off little pieces to make your gnocchi and now you want to shape them either using a gnocchi board or the back of a fork.
  5. Your gnocchi is now ready to be used in whatever recipe you would like. Bring a pot of water to the boil and drop the gnocchi into the water. As soon as the gnocchi floats to the top of the water, count to 10 and remove from the water.
  6. To make the sauce take a pan add some olive oil and a knob of butter, add the garlic and gently fry that. Pop in the tomato, salt, pepper and the gnocchi and coat it over with the oils.
    Add in some parsley and a little parmesan cheese, stir it all through. Pour in the cream stir and that is it. Simple and delicious.
