Pasta Carbonara – Simple Recipe, no Cream Guanciale

How to make Pasta Carbonara
Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients 

  • 20g /1oz of Salt
  • Spaghetti
  • A few Slices of Guanciale
  • A tablespoon of Olive Oil
  • 2 whole Eggs
  • 1 Egg Yolk
  • A good handful of Parmesan Cheese
  • Black Pepper

Instructions

  1. Place a large pot of water on to heat, add the salt and bring to the boil. Add the pasta and cook for 5-10 minutes depending on the pasta.
  2. Cut the guanciale into cubes and add into a pan with a drizzle of olive oil. Cook on a medium heat until crispy and golden brown.
  3. In a bowl break the two whole eggs and add the egg yolk, whisk them together and grate in the parmesan cheese. Add some black pepper and whisk everything together well.
  4. Once the pasta is cooked remove it from the water and add it into the pan with the crispy guaniacle with the heat off and coat the pasta all over with the lovely guanciale oil. Pour in the egg and cheese sauce and toss the pasta through once more and your carbonara is ready to be served. It’s as simple as that.
