Rainbow cheesecake – Wow!!

This is an absolutely delicious No Bake, Fruit Layered, Rainbow Cheesecake made in individual portions.

You could easily make this as one large dessert too.
All you need for this recipe is lots of smiles and even more of patience but it will be worth it in the end.

How to make Rainbow Cheesecake
Prep Time: 10 Minutes
Set Time: At least 30 minutes for each Layer and a few hours once you have finished Layering

Ingredients

  • 40g / 1.5oz of Digestive Biscuits or Graham Crackers
  • 40g / 1.5 oz of Melted Butter
  • 250g / 8oz of Cream Cheese
  • 250g / 8oz of Thick Cream
  • 4 teaspoons each of 6 different Flavoured Jello’s
  • 2 tablespoons of Hot Water for each Flavour
  • Some Whipped Cream – optional
  • Gold Lustre Dust – optional

Instructions

  1. Break the biscuits into crumbs, either in a food processor  or by hand. Melt the butter and add to the biscuit crumbs. Mix to combine.
    Divide between the three glasses and push down to form the base of the cheesecake.
    Set aside in the fridge for 10 minutes.
  2. Place the cream cheese and cream in a bowl. Mix together until combined.
    Divide the mixture into six – 80g / 2.8oz was what I used.Place one portion into a small bowl.
    Spoon the first jello into a glass and add the hot water. Stir through until the crystals dissolve. Pour the coloured jello onto the portion of cream cheese. Mix through thoroughly. Divide the mixture between the three glasses and spoon on top of the biscuit base.
    Tap the glass on the counter to level the mixture.
    Allow to set completely before adding the next layer.
  3. Repeat steps 9 – 15 with each flavoured jello.
    Once you have all the layers of the cheesecake in the glass it is best to let it set for a few hours.
    Decorate with whipped cream and gold lustre dust.
    This is best served at room temperature so you can taste all the wonderful flavours.
