Sticky Date Pudding in a Mug with Caramel Sauce 2


Now what better way to finish this little series of Mug Cakes than with a Sticky Date Pudding. You are going to love this one.

This Sticky Date pudding is truly scrumptious.

It is super delicious and has a delightful caramel sauce that can’t wait to burst out all over the moist sponge.

I know it starts life in a bowl but that is just so that I can crown it with a gooey caramel sauce. If you skip the caramel you could make this one all in the mug…. Yeah right, skip the caramel? as if that’s going to happen LOL

How to make Sticky Date Pudding in a Mug
Prep Time: 2 Minutes

Cook time: 40 seconds for the Caramel AND 1 minute 20 seconds in a 1000W microwave for the Sponge

Ingredients
For the Caramel Sauce

  • A Tablespoon of Butter
  • 1 Tablespoon of Soft Brown Sugar
  • A Tablespoon of Maple Syrup
  • 1 Teaspoon of Thick Fresh Cream

For the Sponge

  • 8 Dates, chopped and coated with a little flour
  • 2 Tablespoons of Soft Brown Sugar
  • 2 Tablespoons of Soft Butter
  • 1 Egg
  • 2 Tablespoons of Milk
  • 1 tablespoon of Molasses
  • 4 Tablespoons of All Purpose / Plain Flour
  • 1/4 of a teaspoon of Baking powder
  • 1/4 of a Teaspoon of Baking Soda

Instructions

  1. To make the caramel sauce, place the butter, sugar and maple syrup in a mug. Place in the microwave for 40 seconds. Remove from the microwave and stir in the cream. Set to one side.
  2. Chop up the dates and mix with a spoonful of flour so they are coated completely.
  3. In a separate bowl place the sugar and butter. Cream together until light and fluffy. Add the egg and whisk through. Spoon in the milk and Molasses and mix thoroughly.
    Add the flour , baking powder and baking soda and mix to a smooth batter.
  4. The batter may split but this is just a reaction of the baking powder and soda it doesn’t effect the finish pudding. Place a few of the chopped dates into the caramel sauce in your mug. Gently stir the rest of the dates into the batter.
  5. Spoon the batter into the mug on top of the caramel sauce. Because the caramel sauce will ooze out when cooked I tend to stand the mug in a bowl before placing in the microwave.
  6. Place in the microwave for 1 minute 20 seconds. Remove from the microwave and carefully tip into the bowl. Be careful as the sauce is very hot! Serve with ice cream or fresh cream and enjoy.
