Easter Macaron Recipe – Gluten Free Hot Cross Bun Macaroons
How to a Easter Macaron Recipe
Prep Time: 20 Minutes
Oven Temperature: 140C / 275F
Cook time: 18-20 minutes
Ingredients
- 1 Cup of Powdered / Icing Sugar
- 1 Cup of Ground Almonds
- 2 Egg Whites
- 2 Tablespoons of Castor Sugar
- 1 Teaspoon of Mixed Spice
- Food Colouring
- Chocolate Ganache for the filling

Instructions
- Place the egg whites into a bowl and whisk them with a hand mixer until fluffy. Add the castor sugar and continue whisking until thick and glossy.
In a separate bowl sift the powdered sugar and almond meal and mix together.
Add half of the sugar and almond meal to the egg whites and gently fold in.
Add the remaining sugar and almond meal and again gently fold in. - Take a couple of spoonfuls of the mixture and place in a small bowl. Set to one side.
To the main mixture add a few drops of food colour and the spices. Mix gently until you have a solid colour.
Pour the mixture into a piping bag.
Place the white mixture from the small bowl into another piping bag. - Place the Macaron template onto a baking sheet and cover with some baking paper.
Cut the end off the big piping bag and pipe a small amount of the brown mixture onto each circle on the template.
Only pipe half of the mixture and use the white mixture to pipe a cross on top of each macaron.
You need to tap the baking tray a couple of times on the countertop as this helps to form the ‘foot’ of the macaron. - Continue to pipe the other half of the brown mixture. These ones don’t need crosses as they are the bases. Once again tap the baking tray on the countertop a couple of times. You can if you wish slide out the templates now.
Allow the macarons to sit on the side for 20-40 minutes before cooking to form a slight skin on the surface. - Preheat the oven to 140C / 275F.
After the macarons have sat on the side place them into the oven for 18-20 minutes.
Remove from the oven when cooked and allow to completely cool. - Once they are cooled you can fill them with a chocolate ganache. Gently push them together once you have put the ganache on to one biscuit.
Now your Hot Cross Macarons are ready to serve.
