I decided that Blueberry Pancakes were the order of the day for Breakfast.
During my recent stay in Palm Springs I was lucky enough to buy 2lb /1kg of Fresh Blueberries and they were so cheap too.

How to make Blueberry Pancakes
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients
- 1 cup of All Purpose Flour
- 2 tablespoons of Sugar
- 1 teaspoon of Baking Powder
- 1/2 a teaspoon of Baking Soda
- 1/2 a teaspoon of Salt
- 1 Egg
- 1 cup of Buttermilk
- 2 tablespoons of Melted Butter
- 1 cup of Blueberries
Maple Syrup and Butter to serve

Instructions
- In a large bowl add the flour, sugar, baking powder, baking soda and salt. Add the egg, buttermilk and melted butter and whisk together to get a lovely smooth batter. Add the blueberries and gently stir into the batter.
Allow the batter to sit for a while to let the flour absorb all the liquids. - Place a frypan onto the stove and allow to get hot. Spoon a cupful of the batter into the centre of the pan and evenly distribute the blueberries. Allow to cook on one side until you can see no more liquid then turn the pancake over. Cook for about 30 seconds on the second side then remove and place onto a serving plate.
- Continue to cook the pancakes and stack on the plate . Serve with Maple syrup, butter and extra blueberries and enjoy.
