You will Need
140g / 5oz Raisins
140g / 5oz Sultanas
140g / 5oz Dates, chopped
140g / 5oz Currants
50g / 2oz Glace Cherries, halved
50g / 2oz Candied Peel
1 Lemon Zest, grated
1 Orange Zest, grated
1 cup of Dark Ale or Stout
2 Tablespoons of Molasses or Black Treacle
A good slug of Brandy
100g / 3.5 oz Soft Dark Brown Sugar
100g / 3.5 oz Breadcrumbs
100g / 3.5 oz Suet
60g / 2oz of All purpose Flour
1 teaspoon of Ground Nutmeg
1 teaspoon of Ground Ginger
1 teaspoon of Ground Cinnamon
1/2 a  teaspoon of Ground Cloves
2 Tablespoons of Dutch Processed Cocoa Powder
1 Granny Smith or Bramley Apple, grated
2 Eggs

If you haven’t got a pressure cooker follow these Instructions
The steaming – One large, litre pudding needs to steam for 8 hours, medium 500ml pud for 6 hours, and a tiny pud, 400ml will need 4 hours. To do this here are two other options.
1. Place the pud in a large saucepan, fill 2/3 up the outside of the pudding basin with hot water and heat until the water boils. Place the lid on the saucepan and allow to simmer on a very low heat for the length of time indicated above.
Important! You will need to keep topping up the water every now and then.
You can steam them in a slow cooker. Place the pudding in the bowl of the slow cooker and fill around the pud with hot water, place the lid on, turn the slow cooker on to high and leave to cook. You will need to add an additional hour, at least, onto the baking time for this method because it takes some time to get up to temp, however the water needs a lot less topping up but still keep a close eye on it
