Instructions

  1. If you are using dried chickpeas you will  need to soak them for at least 8 hours. Just place them in a bowl and cover them with water. If you use canned chickpeas make sure to drain them well.
  2. Which ever chickpeas you use once they are ready place them into a bowl. Roughly chop the parsley and coriander and add to the chickpeas.
Chop the onions and toss them into the bowl.
Using a food processor, chop the ingredients up until you have the texture you want. I prefer a fine Falafel but it can be more coarse it is up to you.
Tip back into a bowl and add the coriander seeds, coriander powder, cumin seeds, cumin powder, salt and pepper.
    Thoroughly mix through.
  3. If the Falafel mixture feels too damp sprinkle some flour into the mix and stir through.
Pour some oil into a saucepan and heat the oil to about  350F-375F / 175C-190C.
To test if the oil is hot enough drop a small cube of bread into the oil and if it bubbles immediately the oil is ready to use.
  4. Shape the Falafels by taking a small piece of the mixture and squeeze it together in your hands to form a almond shaped ball.
Gently drop the balls into the hot oil 4 or 5 at a time and fry until golden brown.
Remove from the oil using a slotted spoon and place onto some kitchen paper to drain.
  5. To serve the Falafel, chop up the tomato, onion and cucumber and mix together in a bowl.
Slice open the Pita pockets and place two Falafel in the bottom, top with the salsa and tahini sauce. Then repeat the layer once more.
  6. Your Falafel is now ready to enjoy.
