How to make Fresh Pasta
Prep Time: 10 minutes
Cook Time: 2 minutes
Ingredients
- 200g / 7oz of Flour (00 or All Purpose)
- 2 Eggs
- A good pinch of Salt

Instructions
- Place your flour onto the countertop and make a hole in the centre to drop the eggs into. Before you add the eggs push a couple of tablespoons away from the pile to add back in later if you need it. this will depend on the size of your eggs and the humidity of where you are.
- Break the eggs into the hole in the flour and sprinkle on the salt. Use a fork to gradually whisk the eggs and flour together. Once the dough starts to come together use you hands to make it into a nice soft dough. If it is too wet use some of the extra flour that you kept to one side to get a good consistency. Knead the dough as you add the flour to get that ‘play doh’ like consistency.
wrap the dough in plastic wrap and leave to one side for about 30 minutes. - After 30 minutes or so remove the dough from the wrap and it is ready to roll to make pasta. You can use a pasta rolling machine and just follow the instructions for your machine to get nice thin pasta sheets
OR - Lightly dust your countertop with flour and using a rolling in roll out the dough until it s nice and thin. Keep dusting the countertop with flour so the dough doesn’t stick. Once the dough is nice and thin you can either cut it into squares for lasagne or ravioli or gently roll the pasta up and then cut off strips, at whatever thickness you require, to make tagliatelle , fettuccine or the like. Unravel the dough and drop in clumps onto a board.
You can either cook the pasta straight away in salted water or leave them to dry on the board and then pack them into an airtight container to use later.
