How to make Nyonya Fried Chicken
Prep Time: 10 minutes
Marinade Time: At least 2 hours
Cook Time: 5-10 minutes
Ingredients
- 1.5kg / 3lb of Chicken Pieces
- 1 teaspoon of Cumin Powder
- 1 teaspoon of Coriander Powder
- 1 teaspoon of Black Pepper
- 1 teaspoon of Fennel Powder
- 2 teaspoons of Chilli Powder
- 1/4 of a teaspoon of Clove Powder
- 2 teaspoons of Turmeric Powder
- 1/2 a teaspoon of Cinnamon Powder
- 2 teaspoons of Sugar
- 1 teaspoon of Salt
- 6 Shallots, Blended
- 7 tablespoons / 100 mls of Coconut Milk
- 3 tablespoons of Cornflour
- 4 stalks of Curry Leaves
Dipping Sauce
- 6 Shallots, finely sliced
- 1 Red Chilli, deseeded and finely sliced
- 1 teaspoon of Mustard Powder
- 1/4-1/2 a cup of Worcestershire Sauce
- 2 tablespoons of Sugar

- Place all of the spice powders and the salt and sugar into a large bowl.
Add the blended shallots and the coconut milk to the bowl.
Mix together thoroughly. - Now add the chicken pieces and massage the marinade into the chicken until thoroughly coated.
Sprinkle over with the cornflour and stir through
Add the curry leaves and mix.
Cover and leave to one side to marinade for at least a couple of hours but preferably overnight. - When ready to cook fill a fry pan or wok with enough oil to submerge the chicken in.
Heat the oil till hot and gently drop the chicken pieces into the hot oil. Cook for 5-10 minutes depending on the thickness of the chicken pieces.
Remove from the oil once cooked and allow to drain on kitchen paper before serving. - To prepare the dipping sauce finely slice the onions and chili.
Add the mustard powder and Worcestershire sauce.
Add the sugar to taste and stir through. - Your Nyonya Fried Chicken is now ready to eat. It’s delicious, Enjoy!!!
