Instructions
- Place the Masa into a bowl, add the salt and pour in the water. Use a fork to start to mix together and then use your hands to form into a dough. It will resemble a dry play dough and at first it may look like you haven’t added enough water but it does come together so be careful not to dd any extra water unless necessary. Cover with a damp cloth and leave for 10-20 minutes to allow the flour to bloom and absorb the water.
- Divide the dough into 8 equal balls of dough. Remember to keep any dough that you are not working with under a damp cloth. I use butchers plastic cut into squares slightly larger than my press to form my tortillas between. Place one piece of plastic on the press pop the dough ball in the centre and top with another piece of plastic. Press down gentle and then turn the tortilla dough 180 degrees before pressing down for a second time, this time more firmly.
- Have you pan nice and hot and then place the tortilla into the pan and ‘sear’ one side for about 10-20 seconds. flip over to sear the second side and you should start to see the air pockets starting to form in the centre. I press the side of the tortilla gently as I rotate it in the pan to get a nice even cook. Flip the bread one last time and repeat the pressing to get complete seperation. Place the cooked tortilla onto a plate and repeat with the rest of the dough balls. If you stack the breads once they are cooked they will sty hot and soft.
- Now the Tortillas are ready to be enjoyed however you want to eat them. Have fun!
