8 Desserts 1 Tray – Can it be Done ? 5


I was challenged by a fellow Youtuber, Stephen Halbhuber. Could I make 8 Desserts in 1 Tray?
Well I’m always up for a challenge and of course I decided it would make a great Video Recipe.

Now this has been made with ‘Box Desserts’ but I just had to try and recreate it completely from Scratch. I think it turned out great and it was certainly fun to make but by all means if you want to make this yourself you can use ‘Box Mixes’.

How to make 8 Desserts in 1 Tray
Prep Time: 30 minutes
Bake Time: 1 Hour
Oven Temperature; 150C / 300F

Ingredients

Chocolate Chip Cookie Dough

  • 215g / 7.5oz of Brown Sugar
  • 85g / 3oz of Butter
  • 1 teaspoon of Vanilla
  • 1 Egg
  • 130g / 4.5oz of All Purpose Flour
  • 1/2 a teaspoon of Baking Powder
  • 1/4 teaspoon of Salt
  • 150g / 5oz of Chocolate Chips

*I made up this amount of cookie dough but it was too much so placed probably half of the mixture in the freezer wrapped in cling wrap for another day 😀

  1. Cream the sugar and butter together and then add the egg and vanilla, beat until mixed thoroughly. Add the flour, baking powder and salt and combine until you have a cookie dough. Lastly add the chocolate chips and stir through
  2. Place the cookie dough in the fridge to chill wrapped in plastic wrap.

M&M Cookie Dough

  • 100g / 3.5oz of Brown Sugar
  • 115g / 4oz of White Sugar
  • 85g / 3oz of Butter
  • 1 teaspoon of Vanilla
  • 1 Egg
  • 130g / 4.5oz of All Purpose Flour
  • 1/2 a teaspoon of Baking Powder
  • 1/4 teaspoon of Salt
  • 40g / 1.5oz of Chocolate Chips
  • 145g / 5oz of Mini M&M Candies

*Again I made up too much of this cookie dough so I popped about half of the mixture in the freezer wrapped in cling wrap for another day 😀

  1. Cream the sugars and butter together and then add the egg and vanilla, beat until mixed thoroughly. Add the flour, baking powder and salt and combine until you have a cookie dough. Lastly add the chocolate chips and and most of the M&M’s ( save some to top the dough with in the tray) and stir through
  2. Place the cookie dough in the fridge to chill wrapped in plastic wrap.

Chocolate Smore’s

  • 6 Cookies – Graham Crackers or similar
  • A Bar of Dark Chocolate
  • A handful of Mini Marshmallows

Chocolate Brownie Batter

  • 55g / 2oz of Butter
  • 1/2 a tablespoon of Coconut oil
  • 100g / 3.5 oz of Castor Sugar
  • 1 Egg
  • 1/2 a teaspoon of Vanilla
  • 40g / 1.5oz of All Purpose Flour
  • 30g / 1oz of Dark Cocoa
  • 1/4 teaspoon of Salt
  1. Cream the butter, coconut oil and sugar together and then beat in the egg and vanilla. Add the flour, cocoa and salt and stir together until a brownie batter is formed.
  2. Place into a small bowl, cover and pop in the fridge to chill.

Short Crust Pastry

  • 250g / 9oz of All Purpose Flour
  • 125g / 4.5oz of Butter
  • 2-4 tablespoons of Cold Water
  1. Rub the butter into the flour in a bowl until you have a breadcrumb like consistency. Gradually add the cold water until a pastry dough is formed.
  2. Wrap in plastic wrap to chill for 30 minutes then roll out a piece of pastry  to fit one quarter of the tray forming a base pie crust. Return to the fridge on a flat tray. Make the side wall of the pie crust and the middle divider piece of the pie and place in the fridge to chill.

Pumpkin Pie Filling 

  • 1 Egg
  • 35g / 1.25oz of Sugar
  • 20g / 3/4oz of Brown Sugar
  • 145g / 5oz Pumpkin Puree
  • 60ml / 1/4 of a cup of Thick Cream
  • 1 teaspoon of Vanilla
  • 3/4 of a teaspoon of Pumpkin Spice
  • 1/4 of a teaspoon of Salt
  • 6 tablespoons of Self Raising Flour or All Purpose Flour + 1 teaspoon of Baking Powder
  1. Place all of the ingredients into a bowl and mix together thoroughly. Pop into the fridge to chill.

Apple Pie Filling

  • 2 Granny Smith Apples
  • 1 teaspoon of Mixed Spice
  • 1 tablespoon of Sugar
  • Enough Water to gently steam the Apples
  • 2 teaspoons of Cornflour / Cornstarch
  1. Pell and slice the apples and place into a saucepan, add the sugar, mixed spice and water and gently steam for 5 minutes. Remove from the heat and stir in the cornflour. Pop the lid on the pan and allow to cool completely.

Banana Bread Batter

  • 55g / 2oz of Butter
  • 100g / 3.5oz of sugar
  • 1 Egg
  • A large Banana
  • 1 teaspoon of Vanilla
  • 125g / 4.5oz of All Purpose Flour
  • 1/2 a teaspoon of Baking Powder
  • 1/2 a teaspoon of Mixed Spice
  • 1/4 of a teaspoon of Salt
  1. Cream the butter and sugar together, add the egg and vanilla and mix thoroughly. Mash the banana and then add to the butter mixture, stir through. Next add the flour, baking powder, salt and mixed spice and mix together.
  2. Pop into a small bowl and place in the fridge to chill.

New York Cheesecake

  • 6 Cookies – Graham Crackers or similar
  • 250g / 9oz of Cream Cheese
  • 30g / 1oz of Castor Sugar
  • 1 tablespoon of Cornstarch
  • 1 Egg Yolk
  • 25ml 1fl oz  of Thick Cream
  • 1 teaspoon of Vanilla
  • Some Lemon Zest
  1. Using a hand mixer whisk the cream cheese, sugar and cornstarch together. Add the egg yolk, cream, vanilla, and lemon zest and mix thoroughly.
  2. Pop into a small bowl and chill in the fridge.

Instructions

  1. Once you have all your dessert mixes made and chilling in the fridge it is time to construct your masterpiece.
    Spray a 11 x 16 inch tray with cooking oil and line with baking paper.
    Visually divide your tray into 8 equal portions.
  2. In the top left hand corner place the chocolate chip dough and shape into a smooth oblong.
    Next place the M&M cookie dough in the 1/8th next to the other dough but in the lower half.
    Lay the cookies for the Smores in the base of the bottom left corner, stand cookie along the inner two sides. Lay the chocolate on top of the cookies and top with the ini marshmallows.
    Pour the brownie batter into the space above the M&M Dough. Level off and make nice and square.
    In the right hand side of the tray lay the pie crust. Trim off the excess along the outer edges. Place the dividing piece of pastry in the centre of the pastry to create two seperate pies. Press along the base to get a good seal. Next place the edge piece of the pie crust in place and seal any edges with a little egg white. You should now have two seperate pie cases.
    Fill the top right pie crust with the pumpkin pie filling and the lower right pie crust with the apple pie filling.
    In the last remaining top 1/8th pour in the banana bread batter and smooth out the top and in the bottom 1/8th lay the cookies in the base and up the sides next to the banana bread and M&M Dough. Pour in the New York Cheesecake and level the top.
    I laid a lattice of pastry over the top of the apple pie just so it would look good and brushed it with a little egg white.
  3. Now it is time to get the tray into a pre heated oven and bake for 1 hour.
    Once it has cooked remove from the oven and allow to cool completely before lifting it out of the tray onto a cutting board.
  4. Cut the desserts into even bite size morsels and don’t worry if you get more than one dessert in a piece that is half the fun.
