MUSHY PEA CUPCAKES – With White Chocolate Chips


Well as promised here is the winning recipe from Steve’s ‘ Bake a Cake’ competition.
Anna was inspired by recipes using the Edamame Bean from her native Japan and she mixed it up to use mushy peas, which are popular in England where she is studying.
The end result – Mushy Pea Cupcakes with White Chocolate Chips and yes they do taste delicious. Go on give them a try!!!

You will Need

150g / 5 oz of Self Raising Flour
150g / 5 oz of Butter
150g / 5 oz of Sugar
3 Eggs
1 x 300g / 10 oz tin of Mushy Peas
1 teaspoon of Golden Syrup
100 g / 3.5 oz White Chocolate Chips

Cooking Temperature 180C / 350F for 10 – 12 minutes
