This is a simple to make dip yet it packs loads of flavour and will sure to be a hit. Serve it with crudities, crackers or chips.

How to make Blue Cheese Dip
Prep Time: 10 Minutes
Ingredients
For the Mayonnaise
- 250ml / 1 cup of Canola Oil
- 1 Egg
- 1 tablespoon of Cider Vinegar or White Vinegar
- Black Pepper
- Salt
- 1 teaspoon of Dijon Mustard
- 3/4 of a teaspoon Sugar
For the Dip
- 1 Cup / 250 ml of Mayonnaise
- 3/4 of a cup / 200 ml of Sour Cream
- 100g / 3.5 oz of Blue Cheese
- Chopped Chives
- Black Pepper

Instructions
- To Make the mayonnaise, pour the canola oil into a tall jug or glass. Add the egg. Pour in vinegar and add the mustard. Season with salt, pepper and sugar.
Using a stick blender, blend until nice and thick and creamy. - To make the dip. Add the sour cream to your mayonnaise. Crumble the blue cheese and stir into the mayonnaise and cream. Chop the chives and add to the dip. Taste and season with black pepper.
- Spoon into a serving dish, cover and allow to sit for an hour to two to let the flavours enhance. Serve with vegetable crudities, crackers or chips.
