Drop Donuts – I love these, they taste fantastic.
I had great fun following Lois’s recipe on how to make West African Drop donuts and I loved forming the donuts with my hands and dropping it into the hot oil.

How to make Drop Donuts – West African Style.
Prep Time: 5 Minutes
Prove Time: About an hour
Fry Temperature: 150C / 300F
Cook time: 5 Minutes
Ingredients
- 2 cups all purpose flour
- 1 cup Water
- ¼ cup Sugar
- 1.5 tsp Yeast
- ¼ tsp Nutmeg
- ¼ tsp Cayenne Pepper
- pinch of Salt
- Oil for deep frying

Instructions
- Place flour into a large bow. Add the yeast, cayenne, salt, sugar and nutmeg to the flour. Pour in the water and stir through until you have a thick,slightly sticky batter. Cover with a damp cloth and set to one side to rise for about an hour. The batter should double in size.
- Place the oil into a deep saucepan and heat to 150C / 300 F. Using an ice cream scoop, or your hands if you are confident, drop the batter into the hot oil without overcrowding the pan.
Once one side of the donuts are lightly browned, turn and continue to fry until the donuts are done. I found that the donuts tended to turn themselves but keep an eye on them.The whole frying process for each batch took about 5 minutes. - Drain donuts and serve warm with your favourite jam.Enjoy!!
