I had such fun making this Easy Eton Mess, using Meringues made in the microwave and Tropical fruits. 😋 😎
How to make Easy Eton Mess
Prep Time: 10 minutes
Cook Time: 30-45 Seconds
Ingredients
For the Meringues
- 1 Egg White
- 250-300g /9 -10.5 oz of Powdered/Icing Sugar
For the Dragon Fruit Sauce
- Some Dragon Fruit
- Icing Sugar
- Water
To Assemble the Eton Mess
- Fruits of Choice, I used Dragon Fruit, Mango and Passion Fruit
- Thick Fresh Cream
- Ice Cream

Instructions
- I started my Eton Mess by making the Meringues. Separate the egg white from the yolk and place the white in a bowl. Add the icing sugar ( I added most of it but kept some back as the size of the egg whites can vary. I ended up adding all the icing sugar 🙃 )
Mix together until you get a thick dough like paste, similar to a soft modelling clay. Take a small pinch of the dough, roll into a ball and lay onto baking paper. I cooked four meringues at a time. Place the baking paper with the balls into a microwave and on medium power cook for 30-45 seconds. You may need to test on ball to see how long they take to cook in your microwave.The meringues will puff up to triple the size and then cook for a further 5 seconds or so. Allow to cool slightly before placing on a plate. Continue to cook all the meringues until you have a huge plate full. - I made a dragon fruit sauce by placing a little sugar and water in a pan, adding the dragon fruit and simmering gently for 4-5 minutes. Once cooked pass the fruit through a strainer to get a lovely pink syrup and set it aside to cool.
- Cut up the fruit and now you can start to assemble the Eton Mess. In a sundae Glass, bowl or, like me a flat plate, layer the meringues, the fruit, the fresh cream, ice cream and sauce and then dig in 😋
