Instructions

  1. In a Fry Pan with a little oil. fry eh ground beef until it has a nice dark colour, season with salt and pepper.
Once cooked set to one side and prepare the onion by dicing into small pieces. Crush the garlic with some coarse slat and finely slice the chilies.
  2. Into a pot add some oil and drop in the onions, begin to fry until they start to soften. Next add the garlic and chilies and stir through, then add the tomatoes, sugar, salt & pepper and the stock. Lastly add the kidney beans and bring up to the boil and then turn down to simmer.
  3. Chop the capsicum into cubes and add to the pot, pop on a lid and then leave to simmer for 25-30 minutes to allow the flavours to all come together and the sauce begins to thicken. Once the chili has cooked through add the coriander or herbs and stir through.
  4. Serve with rice, potatoes, bread, salad or whatever you prefer. This dish improves with age so it can be placed in the fridge once cool and eaten the next day, the flavour will be more intense. Enjoy!!
