Instructions

  1. I use a royal icing that I made Here and I ‘loosened’ the icing a little by adding very small amounts of water and mixing it in thoroughly.
  2. The icing needs to settle after stirring but it still needs to have some thickness so it doesn’t run over the edge of the cookies.
Place the icing into a piping bag either with or without a nozzle. This technic works well both ways.
Holding the piping bag slightly above the cookie, allow the icing to drop on to the surface.
Slowing ‘draw’ your outline of where you want to fill with icing. Allowing the icing to fall onto the cookie helps you to get a smooth line.
Then using a back and forward motion fill inside the icing outline.
  3. Don’t worry if you have bubbles or you miss small places  as you then take a cocktail stick or scribe and gentle fill and massage the gaps together.
Now holding the cookie gently between your fingertips give the cookie a good ‘shake’. This helps to flatten and smooth the surface of the icing.
Leave on the side to completely harden and your cookies are ready to go.
