Instructions

  1. For this recipe you will need to have some cooked sushi rice. You can watch my How to cook Sushi Rice video here .
  2. Onigiri can be made with many different fillings, it really is up to you what you use. The rice is best to be worked with at room temperature and just cover it with a damp cloth, as this helps it to stop drying out.
  3. Next to where you are preparing the Onigiri you will need a small bowl of water that has been seasoned with about a teaspoon of salt. This is so you can wet your hands at regular intervals to stop the rice sticking to your hands.
Take a portion of the cooked rice in your hand and press it together to form a ball shape.
Using your thumb push a hole or indentation into the centre of the rice.
  4. Take your desired filling, not too much, and pop it into the hole, push it down then add an extra bit of rice to cover the filling.
  5. Now you need to mold the Onigiri into the traditional pyramid shape. I use my fingers to pinch and squeeze it into shape.
Take a little strip of nori Seaweed to place on the bottom of the pyramid and allow it to come up the sides just a bit. this is what you use to hold the Onigiri with so you don’t have to hold the sticky rice.
  6. I like to dip the tips into black sesame seeds to give a nutty flavour.
Your Onigiri are ready to eat and as I said they make a great packed lunch snack.
