How to Make Thai Pineapple Fried Rice


Nothing beats Pineapple Fried Rice. The first time I had Thai Pineapple Fried Rice it was served in a whole pineapple. It made me smile and it tasted delicious to boot.

I love this Thai dish, although not traditionally served in a pineapple, it has great combination of flavours and textures.

How to make Thai Pineapple Fried Rice
Prep Time: 10 Minutes
Cook Time: 10 Minutes

Ingredients

  • A Pineapple
  • 1 cup of Rice, cooked and it is better if it is a least a day old.
  • 1 tablespoon of Oil
  • 1/2 a cup of Cashews
  • 1 small Onion, diced
  • A small piece of Fresh Ginger, finely sliced
  • 2-3 Cloves of Garlic, crushed
  • 1 Red Chili, finely sliced
  • 6-8 Raw Prawns
  • 2 small carrots, diced
  • 1 Egg
  • Diced Pineapple, use what you cut out of the whole Pineapple
  • 1 tablespoon of Soy Sauce
  • 1 tablespoon of Fish Sauce
  • 3-4 Spring Onions, mainly the green end sliced
  • A bunch of Coriander or other Green Herbs, chopped
  • Pork or Chicken Floss, to serve

Instructions

  1. First you will need to prepare you pineapple so the rice can be served in it. Slice the pineapple from top to bottom down one side. Then cut out the centre flesh. Best to watch the video on how I do this.
  2. Now you can prepare your fried rice. Start by adding some oil to your pan and frying the cashews until golden. Remove from the pan. Add the onions, ginger, chilli and garlic to the pan. Cook for a about a minute. Add the Prawns and cook until they just start to turn pink. Remove the prawns and set to one side.
    Add the carrots and then push all the ingredients to one side of the pan.
  3. Crack the egg into the pan, stir and start to cook through. Add the cooked rice and stir until completely mixed together. Add the chopped pineapple, stir and cook for about a minute.
    Pour in the soy sauce and the fish sauce. Stir through.
  4. Chop and add the spring onions and herbs.
    Keep two of the prawns for decoration and roughly chop the rest of the prawns.
    Add to the rice along with the fried cashews. Give the rice one final stir through to make sure it is all mixed together and you are ready to serve.
  5. Spoon the rice into the prepared pineapple and decorate with extra cashews, pork floss and the whole prawns.
    Dig in and enjoy your Pineapple Fried Rice.
