Mango Sticky Rice Pops


My favourite Thai dessert at the moment is Mango Sticky Rice so when I got my Zoku Popsicle Molds I decided to mess around with the recipe and came up with these delicious Mango Sticky Rice Pops.

I love the sweet, salty combination of the coconut rice and then the sweet juicy Mangoes just finish it all off.

This is a cool way to cool down on a hot summers day and the kids are sure to love these too.

How to make Mango Sticky Rice Pops
Prep Time: 5 minutes
Cook Time: 10 minutes for the Rice
Freeze Time: 4-6 Hours

Ingredients

  • Popsicle Molds
  • A Ripe Mango
  • 1/2 a cup of Rice
  • 1/2 a cup of Water
  • 1 cup of Coconut Cream
  • 1/3 of a cup of Sugar
  • 1/4 of a teaspoon of Salt
  • 1 teaspoon of Vanilla Extract or Pandan

Instructions

  1. Cook the rice using my 10 minute rice method (http://steves-kitchen.com/how-to-cook-perfect-rice/) and once cooked place to one side.
  2. When the rice is cooked place the coconut cream, sugar, salt and vanilla extract into a saucepan and bring to boil to dissolve the sugar. Once dissolved remove from the heat and pour over the cooked rice, then stir gently so as not to break up the rice grains.
  3. Peel and slice the mango and place inside the popsicle molds. Spoon in the rice mixture, pop in the stick and lid and place in the freezer to set.
  4. Once frozen your ice pops are ready to go. Enjoy!
