How to make a Nutella Heart Shaped Brioche
Prep Time: 20 Minutes
Prove Time:1-2 hours
Cook Time: 20-25 Minutes
OvenTemperature: 180C / 350F

Ingredients

  • 450g /1lb of Bread Flour
  • 70g / 1/3 of a cup of Sugar
  • 2 Teaspoons of Active Dried Yeast
  • A pinch of Salt
  • 50g / 2oz of melted Unsalted Butter
  • 250ml / 1 of a cup of warmed Milk
  • 2 Egg Yolks (keep the whites to glaze the bread)
  • 1 cup of Nutella

Instructions

  1. Place the flour into a large mixing bowl. Add the yeast, salt (make sure to keep the salt and yeast separate at this stage so as not to kill the yeast) and sugar.
    Pour in the melted butter, warmed milk and egg yolks.
    Using a fork to start with start to mix all the ingredients together.
    Once they are binding together use your hands to form a dough.
  2. Tip the dough out onto the work counter and knead to form a smooth silky dough. I find it takes about 10 minutes to knead the dough to become smooth and silky.
    Pour a little oil into the mixing bowl and coat the dough with the oil.
    Cover the bowl with cling wrap and leave in a warm place for a couple of hours to allow the dough to prove and double in size.
  3. Once the dough has risen nicely, remove from the bowl and place onto a floured surface.
    Use a rolling pin to roll the dough out to an oblong 20 x 10 inches thats 50cm x 25cm.
    Pour the Nutella into the middle of the oblong and spread it out all over. Don’t go right to the edge leave maybe 1inch / 2.5cm all around.                                                                                                                        
  4. Mix the egg whites with a little water and whisk together.
    Brush this all around the bare edges as this will help get a nice tight seal on the bread.
    Starting at the long edge gently roll the dough up into a long sausage. Be sure to seal the edge well. Lift the dough on a baking tray with the sealed edge on the bottom. Ease the dough into a heart shape on the tray.
    Use the egg white to seal the dough edges together. Pinch to seal  well.
  5. Take some kitchen scissors, gently lift the edge of the dough and cut towards the centre of the heart leaving 1/2 inch / 1.25cm uncut.
    Continue to cut along the dough about 1/2-1 inch / 1.25-2.5cm apart all the way around the  dough.
    Then to expose the Nutella filling a little, angle the cuts back towards the top of the heart.
    Cover with a damp cloth and leave in a warm place for 20-40 minutes to rise a little.
  6. Preheat the oven to 180C / 350F.
    Before placing into the oven brush with the egg white and water mix.                          
    Place in the oven to bake for 20-25 minutes. If it browns too quickly cover with foil for the last 5-10 minutes to ensure that it is cooked all the way through.
    Once the bread is nice and brown remove from the oven and brush with a sugar glaze of syrup or sugar and water.
    Allow to cool before serving and Enjoy!
