RAINBOW OF COOKIES – M&M Rainbow Cookies


Rainbow Cookies with M&M’s on top make a wonderful gift for Valentines Day, Mothers Day or any occasion for that matter.

Join in the fun as I make these fantastic Rainbow Coloured Cookies.

I think I went a little crazy with the number of cookies I made in this video but they were so good and I had lots of willing helpers ready to eat them all. They certainly didn’t last very long I can tell you.

These make great gifts all wrapped up in a pretty little package or maybe a big package if you make as many as I did. 🙂

How to make a RAINBOW OF COOKIES
Prep Time: 20 Minutes

Cook Time: 10-12 Minutes for each layer
Cook Temperature: 160C / 320F

Ingredients

  • 480g / 1lb of Salted Butter
  • 800g / 1lb 12oz of White Sugar
  • 4 Eggs
  • 1 Tablespoon of Vanilla Extract
  • 770g / 1lb 12oz of All Purpose / Plain Flour
  • 2 teaspoons of Bi carbonate / Baking Soda
  • 6 Rainbow Gel Colours
  • M&M’s

If you want to HALF this Recipe use these amounts

  • 240g / 1/2lb of Salted Butter
  • 400g / 14oz of White Sugar
  • 2 Eggs
  • 1/2 Tablespoon of Vanilla Extract
  • 400g / 14oz of All Purpose / Plain Flour
  • 1 teaspoons of Bi carbonate / Baking Soda
  • 6 Rainbow Gel Colours
  • M&M’s

Instructions

  1. Place the melted or very softened butter into bowl. Add the sugar. Cream together until light and fluffy. Add the vanilla extract and the eggs.
    Stir together until thoroughly mixed.
  2. Add the flour, baking powder and baking soda. Mix together until nicely combined.
  3. Divide the mixture into 6 separate bowls. This works out to be 360g / 12.6oz per bowl. Add a few drops of different food colours to each bowl. I use Food Gels as the colours are more vibrant and stronger but liquids or powders work just as well.
    Mix the colours in until they are evenly mixed through.I like to chill the cookie dough in the fridge for 20 minutes to make them easier to handle but they can be used straight away.
  4. Line a cookie tray with baking paper. Pre heat the oven to 160C / 320F.
  5. Using a 40ml /just over 1oz scoop, scoop the dough evenly spaced onto the cookie tray. Slightly flatten the balls of dough using a knife. Then decorate each cookie with M&M’s. I placed one in the middle of the cookie and then 6 more around that one in a circle. If the M&M’s touch each other at this stage as they cook the cookie spreads a little and gives a perfect circle of M&M’s
  6. Place into the pre heated oven and cook for 10-12 minutes. Remove from the oven when cooked and place on a cooling rack to cool.
