HOW TO MAKE CARAMELS – Chewy Caramel Toffee


I couldn’t find delicious plain Caramels in any of my local stores so I decided to make my own and share the recipe with you all.
Home Made Caramel is so simple to make and tastes absolutely heavenly.

HOW TO MAKE CARAMELS – Chewy Caramel Toffee
Prep Time: 20 minutes plus setting time

Ingredients

  • 1 1/2 cups of Thick Cream (at least 35% fat)
  • 1 cup / 200g of Granulated Sugar
  • 2/3 cup / 130g of a Soft Brown Sugar
  • 1/3 of a cup of Glucose / Corn Syrup
  • 1 tablespoon / 15g of Butter

Cooking Temperature 250’F /120’C or Firm Ball on a Candy Thermometre

Instructions

  1. For this recipe you need to use a thick bottom pan. Pour the cream into the pan. Add the granulated sugar, brown sugar and the corn starch.
    Place on to the stove top and stir to mix together. You want to heat the mixture up to  simmering boil.
  2. Whilst the mixture is heating use a pastry brush dipped in warm water to brush the insides of the pan to get rid of any sugar crystals that may form. This allows the crystals to drop down into the mixture and stops them burning. You can continue to stir until the mixture starts to boil. Then remove the spoon.
    I like to use a sugar or candy thermometer when I make caramel and you want the mixture to reach a temperature of 120C / 250F or ‘Firm Ball” on the thermometer.
  3. Whilst the caramel is cooking prepare the baking tin. I used a 9inch / 23cm square tin. Rub some butter over the surface and then cover the butter with waxed baking paper.
  4. Once the caramel has reached the correct temperature, remove the pan from the heat and carefully remove the candy thermometer. Add the butter to the pan and stir into the mixture.
    Now pour into the prepared tin and tip to level the caramel.
    Leave to one side for about an hour to cool and set.
  5. To clean the pan pour boiling water from a kettle into the pan, place on the stove top and stir around cleaning the sides and the spoon as you stir. You can also clean the candy thermometer in the pan as well.
  6. Once the caramel has set remove from the pan and use a sharp knife to cut through into squares.
