Instructions

  1. I started my Eton Mess by making the Meringues. Separate the egg white from the yolk and place the white in a bowl. Add the icing sugar ( I added most of it but kept some back as the size of the egg whites can vary. I ended up adding all the icing sugar 🙃 )
Mix together until you get a thick dough like paste, similar to a soft modelling clay. Take a small pinch of the dough, roll into a ball and lay onto baking paper. I cooked four meringues at a time. Place the baking paper with the balls into a microwave and on medium power cook for 30-45 seconds. You may need to test on ball to see how long they take to cook in your microwave. The meringues will puff up to triple the size and then cook for a further 5 seconds or so. Allow to cool slightly before placing on a plate. Continue to cook all the meringues until you have a huge plate full.
  2. I made a dragon fruit sauce by placing a little sugar and water in a pan, adding the dragon fruit and simmering gently for 4-5 minutes. Once cooked pass the fruit through a strainer to get a lovely pink syrup and set it aside to cool.
  3. Cut up the fruit and now you can start to assemble the Eton Mess. In a sundae Glass, bowl or, like me a flat plate, layer the meringues, the fruit, the fresh cream, ice cream and sauce and then dig in 😋
