Instructions

  1. Place the flour into a large bowl. Add the cocoa, mixed spice, salt and yeast.  Mix together, add the sugar and stir through once again.
Pour in the melted butter and the milk, then stir together until the dough starts to form. Remove from the bowl and place onto a floured surface and Knead for 5-10 minutes until it is smooth and silky.
  2. Now is the time to add the chocolate chips. Pour some onto the countertop and start to incorporate into the dough, gradually add the chocolate chips until they are all combined.

  3. Form the dough into a long sausage shape and use a sharp knife to divide into 12 pieces.
Roll and shape into a round bun shape. Then place onto a baking tray but do not place the buns too close together as they will rise a fair bit.
Once you have shaped all 12 buns, take a piece of cling wrap and pour on some oil. Cover the cling wrap with the oil and then place over the top of buns. Place in a warm place to prove. The buns should double in size.
  4. Preheat the oven to 200C / 400F.
Once the buns have risen remove the cling film.Prepare the mixture for the cross by combining the flour and water. Mix together till smooth and pour into a piping bag.
Snip off the end of the bag and start to draw the crosses on to the buns.

  5. Once the crosses are complete place the baking tray in the oven and cook for 15 minutes or until golden brown.
Once baked remove from the oven and place onto a cooling rack.
  6. Prepare the sticky topping by placing the sugar and water into a pan. Heat until the sugar has dissolved. Whilst still hot use a brush to cover the tops of the buns with the sugar solution.
Your chocolate hot cross buns are now ready to eat. You should notice that when you pull the bun apart you will have chocolate running throughout the bun.
