Instructions

  1. To check you have the right royal icing consistency for these cookies after stirring the icing, give the dish a little shake and the icing should flatten out within 10 seconds. Just add a little hot water to your icing if yours is too stiff.
  2. Divide the royal icing into separate dishes, one for each colour. I used about 4oz / 100g of royal icing for each colour and added food colour to each dish. Mix the colour thoroughly and cover with cling wrap until you are ready to use.
Place the royal icing into a piping bag and snip off a small opening.
  3. Take a biscuit / cookie and carefully draw a circle around the cookie just a few mm in from the edge.
Fill the circle with more of the icing by piping side to side or round and round. This is called ‘flooding’
Then gently shake the cookie and the icing will flatten, use a toothpick to pop any air bubbles or to gently move the icing and then shake again.
  4. If you want to draw shapes or write on this surface you need to allow the icing to set for 10 -15 minutes before drawing on top.
  5. If you want the colours to meld into each other you will need to immediately change colours and pipe your design onto the wet icing. Give it a little shake and the new colour will sink into the first colour.

  6. Once you have finished the designs allow the cookies to set completely before serving.
  7. You can be as creative as you like with these cookies or just let the kids do all the work for you 😉 Enjoy!
